Custom Task Document Option in Document Dashboard

Would like to be able to customize a document just like we already can do in the Onboarding Documents but do it in the Document Dashboard. I would like a specific employee to be able to pull up this document and have a text box that they are able to answer the question to each line in the document. We are a paperless company and this would help our employees to be able to pull forms up on their tablets and answer company surveys, yearly training forms, ect. As of now, we can only have them acknowledge or sign a document. Which defeats the paperless forms we use everyday.
