Audit ALL fields that can affect employee pay (PREH OTOpt for instance)

PREH OTOpt is currently not audited but should be since it can and does affect hourly employee pay. Any field that can affect employee pay should be audited by default.

Either that, or add a field that lets us toggle on/off auditing for specific fields.

I see there are other comparable suggestions dating back almost 4 years ago to 2017.
